Ingredients

  • 1/2 lb penne pasta
  • 2 sm zucchini quartered lengthwise
  •     and cut into 2" strips
  • 1 med red bell pepper cored, seeded,
  •     and cut 2" by 1/2" strips
  • 1/2 c. bottled balsamic vinaigrette
  •     Freshly-grnd black pepper to taste
  • 1/2 c. crumbled garlic-and-herb feta cheese (abt 2 ounce)
  • 2 Tbsp. minced fresh mint
  •     Salt to taste

Directions

  1. Preheat broiler. Cook pasta in pot of boiling salted water till just tender but still hard to bite. Drain pasta and place in large bowl.
  2. Meanwhile, combine zucchini and bell pepper in medium bowl. Add in 3 Tbsp. vinaigrette and toss to coat. Arrange vegetables on broiler pan; sprinkle with pepper. Broil vegetables till just tender and beginning to brown, stirring occasionally, about 10 min.
  3. Add in vegetables to bowl with pasta. Fold in remaining vinaigrette, cheese and mint. Season with salt and pepper.
  4. This recipe yields 2 servings;
  5. can be doubled.
  6. Comments: Canned chicken soup with a bit of oregano and lemon juice, accompanied by hot pita bread, starts the meal with the proper Greek flavors. Purchased baklava and strong coffee splashed with ouzo conclude the dinner in a spirited way.
