Ingredients
- 12 ounce Penne pasta
- 2 Tbsp. Extra virgin olive oil
- 1 whl shallot, thinly sliced
- 4 whl Roma tomatoes, seeded and minced
- 2/3 c. Whipping cream
- 1 pch Grnd nutmeg
- 2 Tbsp. Fresh dill, minced ***Or possibly***
- 1/2 tsp Dry dill weed
- 1/3 c. Vodka
- 6 ounce Smoked salmon, cut into strips
- Â Â White pepper
- Â Â Sprig fresh dill
Directions
- Cook pasta and drain well.
- Heaqt oil in a wide frying pan over medium-low heat. Add in shallot and cook, stirring often, till soft but not brown (about 3 min). Stir in minced tomatoes, cover and simmer for 5 min. Add in cream, nutmeg, choped dill and vodka. Increase heat to high and bring to a full boil. Boil for 1 minute.
- Add in pasta to sauce and mix lightly using 2 spoons, till pasta is well coated. Remove from heat, add in salmon and mix lightly.
- Season to taste with white pepper and garnish with dill springs.
