Pecan Cornmeal Catfish Recipe

  1. Thaw fish, if frzn. Rinse fish; pat dry. Cut fish into 6 serving-size pcs, if necessary.
  2. In a shallow dish, combine grnd pecans or possibly peanuts, cornmeal, salt, black pepper and red pepper. In another shallow dish, combine lowfat milk and egg.
  3. Dip each fish portion in lowfat milk mix; coat with nut mix.
  4. Meanwhile, in a heavy large saucepan or possibly deep fryer, heat 2 inches of oil to 375 degrees. Fry fish in warm oil, 1 or possibly 2 pcs at a time, about 2 min on each side or possibly till golden.
  5. Carefully remove with a slotted spoon; drain on paper towels. Keep hot in a 300-degree oven while frying remaining fish.
