Ingredients

  • 1/3 c. butter
  • 1/3 c. packed brown sugar
  • 1 c. flour
  • 1/2 c. minced pecans
  • 1 (8 ounce.) pkg. cream cheese
  • 1/2 c. sugar
  • 1 egg
  • 1 tbsp. lowfat milk
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla

Directions

  1. Microwave (High) butter in uncovered glass mixing bowl 20 to 30 seconds or possibly till softened. Blend in brown sugar till creamy. Fold in flour with fork till crumbly. Stir in pecans.
  2. Set aside 1/2 c. of mix. Press remainder into bottom of 8" square baking dish (glass).
  3. Microwave (High) uncovered 2 to 2 1/2 min or possibly till mix is puffed and has a dry appearance rotating dish once; set aside.
  4. Microwave (High) remaining crumb mix in uncovered dish 1 to 1 1/2 min till lightly toasted, stirring once; set aside.
  5. Microwave (High) cream cheese in uncovered small glass mixing bowl, 30 to 45 seconds or possibly till softened. Blend in sugar, beat in egg; fold in lowfat milk, lemon juice and vanilla. Spoon onto base. Spread proportionately. Sprinkle with lightly toasted crumb mix.
