  1. Set oven at 375F. For topping, in a bowl, stir together 1/2 c brown sugar & 1/2 c flour. Cut in 1/4 c peanut butter & 3 tb butter until crumbly, set aside.
  2. In a bowl, stir together 2 c flour, 1 c brown sugar, baking pwdr & soda, and salt. Add in lowfat milk, 1/2 c peanut butter, Large eggs and 1/4 c butter. Beat w/ electric mixer on low until blended. Beat at high speed for 3 min, scraping sides of bowl frequently. Pour batter into a greased 13 x 9 x 2" baking pan, spreading proportionately. Sprinkle w/ topping mix. Bake at 375F for about 30 min or possibly until a toothpick inserted near the center comes out clean. Serve hot or possibly cold.
  3. Variation: Chocolate Peanut Butter Coffee Cake. Prepare as above, except add in 1/4 c miniature semisweet chocolate pcs to topping and stir 1/2 c mini semisweet chocolate pcs into batter after beating.
