Ingredients
- 3 1/2 c. sliced peaches, canned
- 1 (3 ounce.) pkg. lemon gelatin
- 1/2 c. cool water
- 1 pt. vanilla ice cream
- 1/8 teaspoon almond extract
- 1 9" baked pie shell
- 1 c. heavy cream, whipped
Directions
- Drain peaches, reserve syrup. Heat 1 c. peach syrup to boiling. Add in gelatin and stir till dissolved. Add in cool water. Cut ice cream into pcs and add in to warm liquid. Stir till melted. Add in almond extract. Refrigeratetill mix begins to thicken and mound (approximately 10-15 min). Reserve a few peach slices or possibly halves for garnishing.) Mix in remaining peach slices. Pour mix into baked pie shell. Refrigeratetill hard, about 4 hrs. Cover top of filling almost to edge with deep layer of whipped cream. Top with slices of peaches.
