Ingredients

  • 3 c. self-rising flour
  • 1 box vanilla pudding (not instant)
  • 3 tbsp. softened butter
  • 1 egg
  • 1/2 c. lowfat milk
  • 8 ounce. cream cheese
  • 1/2 c. sugar
  • 3 tbsp. peach juice
  • 20 ounce. canned peaches, sliced

Directions

  1. Combine first five ingredients in large bowl and beat 2 min at medium speed. Pour in greased pan. Arrange peach slices over batter.
  2. Combine next 3 ingredients and beat 2 min. Then spoon to within 1 inch of batter mix. Now mix 1 tsp. sugar and 1/2 tsp. cinnamon; sprinkle over cake. Bake in 10 inch pan, 350 degrees, for 30-35 min.
