Peach Ginger Chutney Recipe

This is a simple chutney that goes well with grilled Indian or spicy food. I served it with Grilled Tandoori Turkey Tenderloin. A link for the turkey is provided.

Ingredients

  • 2 ea peaches, pitted and chopped (about 2 cups)
  • 2 Tbs apricot preserves
  • 2 Tbs rice vinegar
  • 1 Tbs ginger, minced
  • salt/garlic pepper to taste
  • minced parsley to taste

Directions

  1. Simmer peaches, preserves, vinegar, ginger and spices over medium heat. Cook for 6-8 minutes, stirring occasionall, or until liquid is nearly evaporated. Off heat, stir in parsley. Can be used now or refrigerated for use later.
