Ingredients

  • 4 x egg, whites
  • 67/100 c. super fine sugar
  • 1 tsp white wine vinegar
  • 1 Tbsp. warm water
  •     Passion Fruit Curd
  • 2 x egg
  • 2 x egg, yolks
  • 5 Tbsp. fresh passion fruit, pulp
  • 2 Tbsp. unsalted butter, cut into little cubes
  • 1/4 c. super fine sugar
  • 1/2 c. thirty-five percent cream, whipped

Directions

  1. Cut up pcs of fruit, of your choice for garnish
  2. Preheat oven to 150 degrees F.Line a baking sheet with parchment paper.
  3. In a mixing bowl add in egg whites, sugar, vinegar and warm water.
  4. Whip till soft peaks form. Spoon meringue onto baking sheet in 4 individual oval shaped mounds.
  5. Place in oven for an hour and 10 min or possibly till the meringues are crisp.
  6. Passion Fruit Curd:Place all passion fruit curd ingredients in a double boiler.
  7. Stir constantly over medium heat till thickened.
  8. This will take approximately 10 to 12 min.
  9. Cold and place in a bowl. Cover and chill.
  10. To serve, place a meringue on a plate.
  11. Place a dollup of whipped cream on top. Drizzle passion fruit curd over whipped cream.
  12. Add in cut up pcs of fruit of your choice.
