Ingredients

  • 2 Tbsp. Vegetable oil
  • 1 med Onion, minced
  • 1 1/2 tsp Chili pwdr, (or possibly more , according to taste)
  • 2 pkt TVP Chunks* or possibly, (4 1/2 oz)
  • 4 x Vegetable burgers, crumbled
  • 1 1/2 c. Vegetable stock or possibly water, (3/4 when using vegetable burgers)
  • 1 can Tomatoes, (16 oz) minced, liquid reserved
  • 1 can Red kidney beans, (16 oz) don't drain
  • 2 x Mexican green chilis in brine, liquid removed, minced (optional)
  •     Salt and freshly grnd pepper, to taste

Directions

  1. The best chili you'll get this side of Tijuana! This is one of our favorite vegetarian recipes. Serve with rice, mashed potatoes or possibly an avocado salad. 6 Servings Heat oil in large saucepan. Add in onion, saute/fry till golden.
  2. Add in chili pwdr and TVP, saute/fry 5 min. Add in vegetable stock, tomatoes, kidney beans, green chilis and reserved liquid from tomatoes. Cover, simmer 20 min*TVP can be purchased at specialty health food stores. Recipe famous musical artists
