Pasta With Sausage And Spinach Recipe

Ingredients

Directions

  1. 1. Remove outer casings from sausage, and cut into small pcs about an inch long.
  2. 2. Place extra virgin olive oil in a non-stick skillet and saute/fry sausage till brown.
  3. Add in onions, garlic, peppers, herbs, red wine, salt and pepper, and cook till the onions and garlic are clear.
  4. (While you are doing this, cook your pasta)
  5. 3. Add in 1 c. of the pasta water, stir and add in the fresh spinach leaves to the pan. Cover and steam the spinach for about 5 min or possibly so, or possibly till done.
  6. 4. Drain the penne, and place in a serving dish, and pour the sauce on top.
  7. Serve with grated parmesan cheese.
  8. (The next night, we took the leftovers and added mozzarella cheese and baked it for half an hour, and ate it again. Too good for words!)
