Ingredients
- 1 tsp extra virgin olive oil
- 1 c. zucchini, in thin 1" strips
- 1 c. mushrooms, sliced thin
- 1/2 c. white cheese, 1/2% fat
- 2/3 c. pasta, cooked
- 6 Tbsp. parmesan cheese, grated
Directions
- Stir-fry veggies in oil 2 min Lower heat and stir-fry one min longer until veggies begin to brown. Add in white cheese. Cook 1/2 minutes . Add in pasta and heat. Sprinkle Parmesan on top before serving.
