  • 2 x chicken breasts
  • 1 Tbsp. extra virgin olive oil
  • 1/2 x onion minced
  • 8 ounce sliced mushrooms
  • 1 c. white beans cooked
  • 2 Tbsp. minced garlic
  • 1/4 c. minced fresh basil
  • 1/4 c. grated Parmesan cheese
  •     Freshly-grnd black pepper to taste
  • 12 ounce pasta (elbow or possibly rotelle or possibly shells)

Directions

  1. Grill or possibly broil the chicken breasts and shred into small pcs. In a large pan, saute/fry the onion and mushrooms in the extra virgin olive oil. Add in white beans, garlic and fresh basil. Add in the chicken and keep hot.
  2. Cook the pasta in water till al dente. Drain and add in to the chicken mix. Toss well. Serve immediately topped with Parmesan cheese and pepper to taste.
  3. This recipe yields 4 generous servings.
