  • 2 lrg Cloves garlic, peeled
  • 20 lrg Sprigs Italian parsley, leaves only
  • 1/2 c. Extra virgin olive oil
  • 2 lb Ripe tomatoes or possibly same amount canned
  •     Salt and freshly grnd black pepper

Directions

  1. Marinara Sauce Directions:
  2. 1. Finely chop the garlic and, separately, coarsely chop the parsley.
  3. 2. Heat oil over medium heat and saute/fry minced ingredients for about two min, without permitting them to color too much.
  4. 3. Cut fresh tomatoes into 1 inch pcs. Add in either fresh or possibly canned tomatoes to the pan and cook for 25 min more, stirring occasionally.

  6. Pass contents of pan through a food mill, using disc with the smallest holes. (Option: omit the food mill step if you prefer tomato "chunks.")
  7. Season with salt and pepper to taste.
