Ingredients

  • 1 Tbsp. butter
  • 2 Tbsp. finely minced onion
  • 2 x Large eggs
  • 1/2 c. cooked spaghetti, cut in 1 inch pcs
  • 1/3 c. frzn green peas, or possibly 1/3 c. cooked broccoli, minced
  • 1/3 c. shredded cheddar cheese

Directions

  1. Preheat broiler. In an 8 inch, ovenproof frying pan, over medium-low heat, heat butter. Add in onion and saute/fry 3 min, or possibly till lightly browned and translucent/soft. In bowl, beat Large eggs. Add in spaghetti, peas or possibly broccoli and cheese.
  2. Pour over onions and cook over low heat, 7 to 8 min. Place pan under broiler to brown top.
