,%20cultivate%20a%20serious%20addiction%20to%20buying%20single%20place%20settings%20of%20pretty%20cutlery,%20and%20develop%20an%20inability%20to%20allow%20any%20morsel%20of%20food%20to%20pass%20your%20lips%20before%20photographing%20it.%3C/p%3E%3Cp%3EYup,%20you%20can%20become%20a%20food%20blogger.%3C/p%3E%3Cp%3ESeven%20years%20ago%20today,%20I%20put%20up%20my%20first%20recipe%20post%20(boerewors%20and%20butternut%20risotto)%20late%20one%20Sunday%20night.%20%20I%20had%20no%20digital%20camera%20so%20there%20was%20a%20fuzzy%20webcam%20picture%20to%20illustrate%20the%20post;%20html,%20jpeg,%20SEO%20and%20CSS%20were%20just%20a%20host%20of%20meaningless%20acronyms%20to%20me;%20and%20my%20entire%20page%20was%20a%20not-so-subtle%20mustard%20yellow%20(!).%20%20Today,%20I%20am%20shooting%20with%20my%20second%20digital%20SLR;%20I%20have%20ditched%20the%20mustard%20yellow;%20and%20for%20the%20past%20three%20days,%20I%20have%20been%20one%20of%20the%20presenters%20of%20From%20Plate%20to%20Page,%20the%20first%20hands-on%20food%20writing%20and%20photography%20workshop%20in%20Europe,%20and%20people%20actually%20came%20to%20hear%20my%20advice%20on%20writing%20about%20food.%20%20Baby,%20you've%20come%20a%20long%20way%20in%20seven%20years!!%3C/p%3E%3Cp%3EI%20am%20always%20in%20awe%20of%20those%20bloggers%20who%20manage%20to%20plan%20far%20enough%20ahead%20to%20bake%20a%20cake%20and%20put%20up%20a%20proper%20birthday%20post%20full%20of%20highlights%20of%20the%20year%20in%20honour%20of%20their%20blog%20birthday.%20%20And%20even%20after%20seven%20years,%20I%20am%20still%20not%20organised%20enough%20to%20do%20this...%20but%20I%20knew%20that%20I%20had%20to%20put%20up%20something%20sweet%20to%20honour%20a%20milestone%20in%20a%20world%20where%20many%20blogs%20don't%20make%20it%20past%20the%20first%20six%20months!%3C/p%3E%3Cp%3EI%20have%20written%20about%20granadilla%20(or%20passion%20fruit)%20Pavlova%20previously,%20for%20Barbara%E2%80%99s%20A%20Taste%20of%20Yellow%20event%20-%20but%20on%20that%20occasion%20I%20was%20pressed%20for%20time%20and%20I%20used%20meringue%20nests%20bought%20from%20the%20supermarket.%20%20Now%20some%20store-bought%20ingredients%20are%20hard%20to%20distinguish%20from%20their%20home%20made%20versions,%20but%20let%20me%20assure%20you%20100%25%20that%20supermarket%20meringues%20are%20not%20on%20this%20list.%20%20Store-bought%20meringues%20can%20never%20attain%20the%20crispy/chewy%20heights%20of%20deliciousness%20that%20home-made%20ones%20can,%20so%20when%20I%20recently%20made%20passion%20fruit%20pavlova%20again%20for%20an%20article%20in%20the%20South%20African%20Times%20magazine,%20I%20decided%20to%20make%20the%20meringue%20bases%20myself.%20%20Store-bought%20meringues%20take%20on%20a%20ghostly%20white%20appearance,%20as%20if%20they%20are%20fresh%20snow%20in%20a%20slightly%20more%20solid%20form,%20with%20uniform%20ridges%20that%20are%20a%20dead%20giveaway%20of%20mass%20production.%20%20%20By%20comparison,%20home-made%20meringues%20are%20a%20lightly%20caramelized%20colour,%20full%20of%20cracks,%20lumps%20and%20bumps%20%E2%80%93%20more%20like%20a%20living%20thing%20than%20a%20mass-produced%20sweet.%20But%20the%20biggest%20difference%20is%20on%20the%20inside.%20%20Whereas%20the%20store-bought%20meringues%20crumble%20to%20fine%20dust%20in%20your%20fingers%20and%20melt%20instantly%20away%20on%20your%20tongue,%20the%20home-made%20variety%20may%20come%20coated%20in%20the%20same%20layer%20of%20brittle%20sweetness,%20but%20inside%20they%20are%20chewy%20and%20gooey%20and%20altogether%20more%20substantial,%20like%20an%20unexpected%20surprise%20gift.%20%20The%20secret%20to%20achieving%20this%20texture%20is%20to%20start%20the%20baking%20process%20at%20a%20higher%20temperature%20but%20to%20reduce%20it%20immediately%20when%20you%20put%20the%20meringues%20in%20the%20oven.%20%20In%20return%20for%20very%20little%20attention%20to%20detail,%20you%20will%20be%20rewarded%20with%20meringues%20that%20are%20not%20only%20prettier%20but%20far%20more%20intriguing%20than%20their%20store-bought%20cousins,%20and%20the%20tart%20granadilla%20pulp%20makes%20a%20wonderful%20partner%20to%20the%20sweet%20meringue.%3C/p%3E%3Cp%3EPASSION%20FRUIT%20PAVLOVA%20(makes%202%20large%20nests,%20enough%20for%204%20people)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20180C%20and%20cover%20a%20large%20baking%20sheet%20with%20baking%20parchment.%20Whisk%20the%20egg%20whites%20until%20they%20just%20form%20stiff%20and%20shiny%20peaks.%20Add%20the%20sugar%20gradually%20and%20mix%20whisk%20really%20well%20between%20additions.%20Continue%20whisking%20for%20another%203-4%20minutes%20after%20all%20the%20sugar%20is%20added,%20until%20the%20meringue%20forms%20stiff%20and%20glossy%20peaks.%20%20Whisk%20in%20the%20cornflour%20and%20vinegar.%3C/p%3E%3Cp%3EWith%20a%20pencil,%20draw%20two%20circles%20of%20about%2010-15cm%20in%20diameter.%20%20Spoon%20the%20egg%20mixture%20onto%20the%20baking%20parchment%20and%20use%20a%20palette%20knife%20to%20spread%20a%20thick%20layer%20of%20the%20egg%20mix%20in%20the%20circle.%20%20You%20can%20also%20make%20a%20depression%20in%20the%20centre%20and%20build%20up%20a%20ridge%20around%20the%20circumference%20of%20each%20circle%20if%20you%20want%20nests.%3C/p%3E%3Cp%3EPut%20the%20baking%20sheet%20in%20the%20oven%20and%20immediately%20turn%20down%20the%20temperature%20down%20to%20120C.%20%20Bake%20for%201%C2%BD%20hours,%20then%20turn%20the%20oven%20off%20and%20leave%20the%20meringue%20in%20the%20oven%20until%20completely%20cold.%20(Don%E2%80%99t%20worry%20if%20the%20meringue%20looks%20cracked%20%E2%80%93%20that%20adds%20to%20its%20visual%20and%20textural%20appeal!)%3C/p%3E%3Cp%3EPeel%20the%20baking%20parchment%20off%20the%20meringues%20and%20place%20on%20a%20serving%20dish.%20Whip%20the%20cream%20together%20with%20sugar%20until%20soft%20peaks%20start%20to%20form.%20%20Halve%20the%20granadillas%20and%20scoop%20out%20the%20pulp.%20%20Spoon%20half%20the%20cream%20onto%20the%20centre%20of%20each%20Pavlova%20and%20serve%20immediately.%3C/p%3E){kind=link}
