Ingredients

  • 1/2 – 3/4 pound large sea scallops
  • 1 tablespoon salted butter
  • 1 tablespoon olive oil
  • 3 to 4 cups low-sodium chicken broth
  • 4 tablespoons unsalted butter
  • 1 medium onion finely chopped
  • 1 clove garlic minced
  • 1 1/2 cups Arborio rice
  • 1 cup dry white wine (Pinot Blanc or Sauvignon Blanc)
  • 1/2 cup fresh peas (frozen will work as well, but NOT canned)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup freshly grated Parmesan (plus a bit more for serving)
