  • 1/2 c. unsalted butter
  • 1 lb chorizo finely diced
  • 6 x garlic cloves finely diced
  • 1/4 c. finely-diced celery
  • 1 med onion finely diced
  • 1/4 c. diced carrot
  • 1 x poblano finely diced
  • 1 x recipe Blue Cornbread crumbled
  • 1 tsp coarsely-minced thyme leaves
  • 1 tsp coarsely-minced sage leaves
  • 1 Tbsp. coarsely-minced cilantro
  • 1 x egg
  • 1/2 c. chicken stock
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 c. fresh cranberries
  • 1/4 c. brown sugar
  • 1 lrg mango peeled, seeded,
  •     and coarsely minced
  • 3 Tbsp. finely-diced red onion
  • 1 Tbsp. chopped jalapeno
  • 1/4 c. coarsely-minced cilantro
  • 1/4 c. fresh lime juice
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. extra virgin olive oil
  • 4 x Cornish game hens
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Blue Corn Chorizo Dressing: Preheat the oven to 350 degrees. In a medium saute/fry pan over medium heat, heat the butter and cook the chorizo, garlic, celery, onion, carrot and poblano for 3 min or possibly till lightly browned.
  2. Transfer to a mixing bowl and add in the cornbread, thyme, sage, cilantro, egg and stock and mix well. Place in 12- by 15-inch baking pan and bake for 25 min.
  3. Cranberry Mango Relish: In a warm skillet combine cranberries and brown sugar, cook till berries start to pop. Add in all remaining ingredients, except cilantro, and heat, (add in a spoon of water if sauce appears dry). Just before serving, toss in the cilantro.
  4. Hens: Preheat the oven to 450 degrees. In a warm roasting pan, heat the butter and oil. Season the hens with salt and pepper to taste and sear till browned all over.
  5. Place, breast-side down in the pan and roast for approximately 12 to 14 min. Check for doneness by seeing if juices run clear when bird is tipped. Remove from the oven and let rest for 5 min.
  6. Plate hens alongside of the dressing and serve with the relish.
