Pan Fried Perch

In Wisconsin, there are many lakes and streams where you can enjoy an afternoon of fishing~ When Big J and I moved "up north" a few years ago, we had every intention of going fishing. We do live on a lake! We bought a canoe, fishing stuff, even got our fishing license, everything! For some reason or another we never have gone. So what's stopping us, eh? This summer our goal is to do some fishin'!! When I catch my first fish, I will take a picture, and of course, share it here:)

Our neighbor, is an avid fisherman. Bob stopped by last week and gave me some wonderful perch fillets. I have to admit, they were the best! So fresh and tasty. So Bob, I am going to take you up on your offer:) I would love to go fishing with you and your lovely wife Jodi this summer!! (I am going to pass on the ice fishing...for now) This is Bob's recipe for Perchwiches~

Bob's Perchwiches~

kaiser or hard rolls, split, butter and toast rolls, if desired.

1. Rinse fish in cold water; pat dry. In a shallow bowl, combine the cheese, cracker crumbs, cornmeal, garlic salt, Creole or Cajun seasoning and pepper. In another bowl, beat eggs and milk or beer. Dip fish in the egg mixture, the gently roll in the crumb mixture.

2. In a skillet, fry the fish in oil for 5-7 minutes or until fish flakes easily with a fork.

3. While fish is frying, in a small bowl, combine coleslaw mix and slaw dressing, butter rolls and toast, if desired.

4. Place fish on split roll, top with coleslaw mixture and tarter sauce. Serve with lemon wedges and french fries~

Note: You can substitute; catfish, walleye, bluegill, crappie, or lake trout for the perch.
