Pan Fried Frogs' Legs With Green Peppercorn Sauce

Ingredients

  • 8 x frog leg
  •     flour, for dredging
  •     salt
  •     freshly cracked black pepper
  • 3 Tbsp. clarified butter
  •     Green Peppercorn Sauce
  • 2 Tbsp. butter
  • 2 x sliced shallot
  • 1 clv garlic
  • 1 tsp green peppercorns
  • 1/3 c. vermouth
  • 1/2 c. cream
  •     salt
  •     freshly cracked black pepper
  •     fresh tarragon, minced

Directions

  1. Dredge the legs in flour and dust off excess.
  2. Heat clarified butter in a large skillet.
  3. Pan fry legs 2 to 3 min per side till golden brown and crisp.
  4. Remove legs and set aside till sauce is ready.
  5. Green Peppercorn Sauce:In a small saucepan over high heat saute/fry shallots in butter for 3 min or possibly till soft.
  6. Reduce heat to medium.
  7. Add in garlic, peppercorns, vermouth and cream. Simmer for 5 to 8 min till reduced by half.
  8. Season with salt and pepper.
  9. Add in the frogs' legs to the sauce and simmer for 3 to 4 min.
  10. Let frogs' legs absorb the sauce. Sprinkle with tarragon and serve hot.
