Ingredients

  • Palestinian Lentil Soup - Pots and Pins - Adapted From Several Recipes
  • 1 large onion, finely chopped
  • 3 to 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon cumin
  • 1/2 teaspoon Za'atar
  • 1/2 teaspoon ground coriander seed
  • 1/4 teaspoon turmeric
  • 1/8 teaspoon cinnamon
  • 4 cups beef broth, divided
  • 4 cups vegetable broth, divided
  • 1 tablespoon sea salt
  • black pepper to taste
  • 1/4 cup long grain rice
  • juice of one lemon
  • Bring the heat back up, add in the remaining two cups of broth and stir in the rice, and bring to a boil for a
  • minute, then reduce the heat to low again, replace the lid, and wait
  • until the rice is cooked (about 15-20 minutes). Remove from heat and add salt and pepper to taste. Stir in lemon juice. Makes about 6 servings.
  • Homemade Za'atar Spice - From About.com
  • 1/4 cup sumac (available at Whole Foods)
  • 2 tablespoons thyme
  • 1 tablespoon roasted sesame seeds
  • 2 tablespoons marjoram
  • 2 tablespoons oregano
  • 1 teaspoon coarse sea salt
