Directions

  1. Wash pork leg/feet thoroughly and drain.
  2. Place the pork leg/feet, peppercorns and garlic in a pressure cooker add in water up to about an inch above the pork.
  3. Bring to a boil and simmer for 30 to 45 minutes.
  4. Remove all scum that rises to the surface once done.
  5. Add in the banana flowers, oregano, bay leaf, onions and vinegar and continue to simmer for another 15minutes, pork skin should be soft like chewy gelatin.
  6. Add sugar and season with salt to taste.
  7. Add in the long green chili on the final 3 to 5 minutes of cooking. Serve hot with a lot of rice.
