Ingredients

  • 2 lb Oxtail
  •     Salt & black pepper
  • 2 x Clove garlic (chopped)
  •     Thyme
  • 2 whl Jamaican pimento -not grounded(allspice)
  • 2 x Onions (minced)
  •     Tomato (minced)
  • 1 x Scotch bonnet or possibly any whole pepper
  • 1 tin lima beans or possibly broad beans

Directions

  1. Here is a recipe for Oxtail that John Mitchell has requested and I have sent it to the list so others could try this dish as well.
  2. Wash oxtail and season with salt, black pepper, garlic and brown in oil . Drain the oil and add in about 4 c. of water to the oxtail and bring to a boil, add in thyme, onions and tomato. Add in the whole pimento to the stew. (it looks like a whole peppercorn). Lower heat and simmer till the oxtail is tender. Add in more water if necessary.. When the oxtail is tender add in the warm pepper (to your desired heat) and add in the beans. Simmer till water evaporates leaving a thick gravy. Serve with rice..
