  • 1 c. peach preserves
  • 1/4 c. fresh lemon juice
  • 1/4 c. Dijon mustard
  • 2 tsp chili pwdr
  • 1/2 tsp warm pepper sauce
  • 1/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 3 lb pork spareribs rack
  •     Salt to taste
  •     Freshly-grnd balck pepper to taste

Directions

  1. Preheat oven to 350 degrees. For sauce, whisk first 7 ingredients in heavy small saucepan to blend.
  2. Place spareribs, bottom-side up, on large baking sheet. Sprinkle with salt and pepper; spread with 1/3 c. sauce. Turn ribs over. Sprinkle with salt and pepper; spread with 1/3 c. sauce. Bake ribs 45 min.
  3. Bring remaining sauce in pan to boil. Brush 2 Tbsp. sauce over ribs. Bake ribs till sauce forms sticky glaze, about 8 min. Cut rack into individual ribs; serve with sauce.
  4. This recipe yields 4 servings.
