Asparagus is in season and will be through the end of May. Not only is it delicious, it is loaded with vitamins, nutrients and has many anti-inflammatory properties. It can be eaten raw, or cooked in a variety of ways; steamed, boiled, roasted, or grilled. When choosing asparagus look for the stalks that do not have dry or split ends and they should tight tips such as the ones pictured above. Asparagus can be stored in the fridge in a produce bag for up to three days. When it’s time to prepare the asparagus, clean it well to remove the dirt and grit that can collect in the tips and gills. This can be done by rinsing it well under running water or soak for about 30 minutes in a bowl of water. Rather than cutting the tough portion off of the stalks, snap off the bottom inch or so with your fingers; it will naturally break leaving you with the most tender portion of the asparagus. Here is a simple recipe for oven roasted asparagus, you can also use the same ingredients and grill them.
