This simple recipes is for those late nights can't think of side dishes to cook and need it done in matter of minutes. I have to give credit where credit is due so this is another of my Awesome sister in law's Recipe. Thank you Julie you are an Awesome cook and sister.

Ingredients

  • 5-6 potatoes (your choice I use red ones)
  • 1/2 Stick of butter (I use Flieshman's Heart healthy)
  • 1 Tsp Salt
  • 1 Tsp black pepper
  • 1 Pkg shredded cheese (whatever your favorite)(i use Monterrey Jack

Directions

  1. If using red potatoes, don't peel just wash and cut into cubes
  2. In a 9 x 13 in baking dish cut butter into slices and place in bottom of dish.
  3. Preheat oven to 400 degrees
  4. Add Potatoes, salt and pepper
  5. when oven is heated place Potatoes in oven
  6. Let cook for about 30 minutes until tender
  7. remove from oven
  8. Sprinkle cheese on top
  9. return to oven until cheese is melted about 5-10 minutes
