Oven Fried Chicken in a Basket Recipe

We all crave for some deep- fried chicken: crispy on the outside and moist on the inside. But guilt feelings almost always get in the way. So how does one enjoy "fried" chicken without the cooking oil? Simple: oven fried chicken. Well, it's not really fried if cooked in the oven; more like roasted. But this recipe comes very close to the deep-fried chicken you might pick up from your favorite chicken place or restaurant. When I first tried this recipe, I was pleasantly surprised at the finished product: crispy, breaded chicken pieces that are moist and juicy on the inside. The secret seems to be the mayonnaise coating that hides under the usual breading. Warning: do not place the basket in the oven!

Directions

  1. Pre-heat oven to 350 ° F.
  2. Combine the bread crumbs, garlic powder, thyme, paprika and salt and pepper to taste in a zip lock plastic bag.
  3. Coat the chicken pieces with mayonnaise.
  4. Place coated chicken inside the plastic bag and shake until evenly coated.
  5. Place chicken in a lightly greased baking dish and bake for 30-40 minutes.
  6. Switch oven to broil and cook for another 10 minutes.
  7. Serve in a basket over shredded cabbage.
