Ingredients

  • 2 Tbsp butter or margarine, melted
  • 2 large eggs, beaten
  • 2 Tbsp milk or water
  • 1/2 cup yellow corn meal
  • 1/2 cup all-purpose flour
  • 1 1/4 tsp paprika
  • 3/4 tsp garlic powder
  • 1 (2.5 - 3 lb) chicken, cut up and skinned

Directions

  1. Preheat oven to 400F. Coat a 13x9-inch baking dish with butter.
  2. Combine eggs and milk in a medium bowl.
  3. Combine corn meal, flour, paprika, and garlic powder in a medium bowl.
  4. Dip chicken pieces into egg mixture, coating both sides, then into corn meal mixture. Place in prepared baking dish.
  5. Bake brushing chicken once during baking with juices from pan, for 45 to 50 minutes or until chicken is no longer pink near the bone. Season with salt and ground black pepper to taste.
