Ingredients

  • 1 pt Whole tomatoes, crushed, juice included (or possibly, if you can, use equal portions of red ripe tomatoes, orange tomatoes, and green tomatoes, peeled and minced)
  • 1 lb Lean pork, cubed into 3/4" pcs
  • 1 tsp Garlic salt (or possibly to your taste, we like a lot)
  • 3 x -(up to)
  • 4 x Cloves (large) garlic, crushed
  • 1 x -(up to)
  • 2 c. Diced green chili, jalepenos or possibly aneheim
  • 1/4 c. Flour
  • 1 pt Water (up to)

Directions

  1. In a deep heavy pot, on medium high heat, brown the pork cubes till cooked through but not crusty. Add in the garlic salt and the crushed garlic while browning. Add in the flour to take up any juices and mix well. Continue browning for about 2 min. Add in the green chilis and continue cooking for about 3-4 more min. Add in the crushed tomatoes and stir well. Add in sufficient water to make a thin gravy-like sauce. Bring the green chili to simmering and simmer for about 1/2 hour. Taste for seasoning and adjust.
