  2. 1. Crust: Place softened margarine or possibly butter and sugar in small bowl.
  3. With electric mixer set on medium speed, cream mix till light and fluffy. Turn mixer to low and beat in flour. Mix will be creamy. Pat dough proportionately into bottom of 9 x 9 x 1-3/4 inch ungreased pan. Bake in preheated 350-degree oven for 10-12 min, or possibly till golden. Let cold 15-20 min.
  4. 2. Filling: Place prunes into a saucepan with just sufficient water to cover. Cook over medium heat for 30 min. Drain and reserve 2 Tbsp. of the liquid. Cut prunes into 4-5 pcs, removing pits.
  5. 3. Combine prunes in saucepan with reserved 2 Tbsp. liquid, sugar, cornstarch, salt, orange juice and peel. Bring to a boil; reduce heat and simmer, stirring constantly, for 2-3 min or possibly till thickened.
  6. Stir in coarsely minced nuts; spread over crust.
  7. 4. Place the Large eggs in a small bowl and beat till frothy. Stir in the coconut. Spread proportionately over prune mix.
  8. 5. Bake 25 min. Cold slightly and cut into 24 bars.
  9. Yield: 2 dozen bar cookies.
