Substitute different citrus fruits to flavour cake

Ingredients

  • For the cake:
  • 3 c all purpose flour
  • 1/4 c poppy seeds
  • 1 1/2 tsp b/powder
  • 1/2 tsp salt
  • 2 1/4 c granulated sugar
  • 1 1/4 c (2 1/2 sticks) unsalted butter at room temp
  • 3 L eggs
  • 1 1/2 tsp vanila extract
  • 1/2 tsp almond extract
  • 1 tsp finely grated orange zest
  • 1 1/4 c milk
  • for the glaze:
  • 1 cup conf sugar, sifted
  • 1/4 c orange juice
  • 1/4 tsp vanilla extract

Directions

  1. Position rack in middle of oven and preheat to 350, generously butter a 10 c bundt pan lightly coat the inside with flour
  2. whisk together the flour, poppy seedds, b/powder and salt. In the bowl of a stand pixer combine the sugar and butter and beat on high until light and fluffy about 5 min. add the eggs 1 at a time, beating well after each one. add the vanilla and almond extracts and the orange zest and beat for 30 sec. with the mixer on low add half the flour mixture, followed by the milk and then the remaining flour beating just until combined after each addition.
  3. pour the batter into prepared pan and bake until tester conmes out clean about 1 hour 15 min. Transfer to a rack to cool for 20 min then turn the cake out onto the rack
  4. make glaze: in a small bowl whisk together the sugar, juice and extract until smooth. brush the glaze all over the surface of the WARM cake and serve
