Directions

  1. DESCRIPTION: These make a great finale for brunch-A nutty shortbread crusttopped with orange marmalade and cream cheese.
  2. Preheat oven to 350. Butter a 9x13 pan. Beat together butter, sugar and saltuntil light and fluffy. Add in flour 1/2 c. at a time and mix till well blended.
  3. Stir in 1 C of the nuts (mix will be crumbly).
  4. Place 1 c of mix in small bowl and add in remaining 1/3 c nuts. Set aside fortopping. Press remaining mix over bottom of buttered pan. Bake 15 min.
  5. Cold. Beat cream cheese in large mixing bowl till smooth. Add in Large eggs one at atime, beating well after each addition. STir in vanilla and 3/4 C of the marmalade. Spread cooled cookie base with remaining 3/4 c marmalade. Pour creamcheese mix over top, spreading proportionately. Top with reserved nut mix.
  6. Bake20-25 min or possibly till center looks set. Cold to room temp in pan on rack.
  7. Cover and chill 3 hrs.
  8. Cut into 24 squares. Chill airtight up to 5 days.
