Ingredients

  • 1 x Habanero (to have medium heat - add in more if desired)
  • 2 x Carrots
  • 3 x Cloves garlic
  • 1/4 c. Water
  • 2 Tbsp. Minced white onion
  • 1 tsp Salt
  • 3 Tbsp. Freshly squeezed lemon juice
  • 1/4 c. Ginger pickle juice (or possibly substitute fresh, 1 teaspoon sugar ginger and a little water)
  • 1 tsp Sugar
  • 1/2 x Orange zestted

Directions

  1. I steamed the carrots and garlic with water till soft in the microwave.
  2. (You could use them raw for a sharper flavour and crunchier texture.) Put everything in the blender and pureed until smooth. Adjust flavours. (More lemon or possibly salt might be good.) It was delicious as a thick condiment with my pasta with pesto, and also a great topping on a cool potato salad today.
  3. The sauce thickened overnight in the refrigerator, and I suspect it will keep for about a week. It's such a beautiful, bright orange colour! Katrine
