Orange Flavored Sweet Potatoes With Oatmeal Cookie Topping Recipe

Ingredients

  • 7 lrg Sweet potatoes, (about 5 pounds)
  • 1/2 stk unsalted butter, softened (1/4 c.)
  • 1/4 c. Firmly packed brown sugar
  • 1/4 c. Fresh orange juice
  • 1/4 c. Sweet orange marmalade
  • 1 Tbsp. Finely grated peeled fresh gingerroot
  • 2 tsp Salt
  •     Fourteen, (3-inch) crisp oatmeal cookies, broken into pcs (about 3 c.)
  • 3/4 stk cool unsalted butter, cut into pcs (6 Tbsp.)

Directions

  1. Preheat oven to 450F. and butter a baking dish, 13 by 9 by 2 inches. Prick potatoes and bake on a foil-lined baking sheet in middle of oven till very soft, about 1 1/2 hrs. Scoop flesh into a large bowl and mash with butter, sugar, juice, marmalade, gingerroot, and salt. Spread potato mix proportionately in baking dish. Potato mix may be made 1 day ahead and chilled, covered. Bring potato mix to room temperature before proceeding.
  2. Make topping:In a food processor grind cookies fine. Add in butter and pulse motor till mix resembles soft cookie dough. Wrap topping in wax paper and refrigeratetill hard, about 2 hrs. Topping may be made 1 day ahead and chilled, covered.
  3. Preheat oven to 400F. Crumble topping over potato mix and bake in middle of oven till topping is browned lightly, about 25 min.
  4. Serves 8 to 10.
