Ingredients
- Orange Creamsicle Cookies - Adapted From The Girl Who Ate Everything
- 2 1/2 cups all purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 2 tablespoons orange zest (for me that was the zest of 4 small oranges)
- 2 cups white chocolate chips (I used Ghirardelli Classic White Chips)

%20and%20it%20spoke%20to%20me...I%20made%20these%20fantastic%20cookies%20for%20my%20sister's%20soiree%20while%20I%20was%20in%20Salt%20Lake%20City,%20and%20they%20were%20the%20hit%20of%20the%20party.%20%20I%20loved%20everything%20about%20them,%20but%20especially%20loved%20the%20bright%20orange%20flavor.%3C/p%3E%3Cp%3EBear%20with%20me,%20a%20side-track%20has%20come%20along...I%20am%20often%20asked%20how%20I%20can%20make%20all%20of%20the%20sweet%20treats%20that%20I%20do,%20you%20know,%20being%20diabetic%20and%20all...like%20Paula-butter-is-my-life-Deen.%20%20And%20in%20light%20of%20Paula's%20recent%20admission%20that%20she%20now%20suffers%20from%20diabetes%20(and%20believe%20me,%20IF%20you%20have%20diabetes%20you%20do%20suffer,%20especially%20if%20you%20are%20a%20foodie!!)%20I%20feel%20I%20need%20to%20offer%20up%20my%20own%20pitiful%20explanation%20of%20why%20I%20make%20what%20I%20do,%20even%20though%20Anthony%20Bourdain%20has%20no%20idea%20who%20I%20am...pity.%20%20%20I%20often%20make%20light%20of%20having%20diabetes,%20because%20if%20I%20don't%20I'll%20just%20cry%20into%20my%20sugar-free%20pudding%20and%20ruin%20the%20whole%20thing...but%20having%20diabetes,%20whether%20Type%201%20or%20Type%202,%20is%20really%20not%20a%20laughing%20matter.%20%20And%20just%20so%20you%20know,%20it%20doesn't%20matter%20what%20type%20one%20has,%20as%20both%20have%20the%20same%20effect%20on%20the%20body.%20%20As%20Paula%20tried%20to%20say,%20between%20bites%20of%20fried%20donut-burgers%20when%20the%20ink%20on%20her%20newly%20signed%20contract%20with%20Novo%20Nordisk%20Pharmaceutical%20was%20not%20yet%20dried,%20it's%20about%20moderation.%20%20Actually%20Paula,%20for%20you%20it's%20about%20money...shame,%20shame,%20shame...but%20for%20the%20rest%20of%20us%20diabetics%20it's%20about%20sugar.%20%20I%20have%20to%20daily%20remind%20myself%20that%20sugar%20for%20me%20is%20like%20shards%20of%20glass%20in%20my%20veins...not%20a%20pretty%20picture%20but%20it's%20usually%20enough%20to%20stop%20me%20from%20having%20more%20than%20one%20of%20anything.%20%20Now%20I%20love%20me%20a%20good%20piece%20of%20cake%20but%20I%20usually%20only%20have%20one%20piece...and%20that%20one%20piece%20is%20eaten%20over%20two%20days.%20%20There%20are%20some%20things%20I'm%20willing%20to%20risk%20a%20coma%20over,%20I%20am%20a%20foodie%20after%20all,%20but%20those%20are%20few%20and%20far%20between.%20%20I%20do%20watch%20what%20I%20eat%20and%20while%20I%20love%20to%20bake%20and%20cook,%20I'm%20not%20the%20sugar%20freak%20in%20the%20family%20-%20that%20title%20belongs%20to%20the%20mister.%20%20HE%20demands%20dessert%20and%20if%20there%20is%20none%20to%20be%20had%20he%20usually%20says%20something%20endearing%20like,%20%22What%20the%20%23$%25&%20do%20I%20pay%20you%20for?!?!%22%20%20He%20will%20never%20be%20accused%20of%20being%20a%20romantic%20poet.%3C/p%3E%3Cp%3EOh,%20one%20last%20thing...I%20have%20never%20made%20a%20Paula%20Deen%20recipe%20that%20I%20didn't%20love...I%20have%20eaten%20at%20her%20restaurants%20and%20own%20all%20of%20her%20cookbooks...I%20watch%20her%20on%20TV...I'm%20a%20fan.%20%20I%20don't%20have%20any%20resentment%20towards%20Paula%20for%20not%20coming%20forward%20with%20her%20diabetes%20diagnosis%20three%20years%20ago...it%20took%20me%20YEARS%20to%20get%20my%20head%20around%20my%20diagnosis%20-%20it's%20a%20very%20personal%20thing%20and%20I%20can%20respect%20that.%20%20However...to%20announce%20to%20the%20world%20that%20she%20has%20diabetes,%20which%20she%20had%20to%20do%20the%20minute%20she%20signed%20that%20contract%20with%20Big%20Pharma,%20and%20then%20pretend%20that%20it%20had%20nothing%20to%20do%20with%20$$$,%20well,%20that's%20just%20bad%20form.%20%20%20I'll%20forgive%20Paula,%20probably%20while%20eating%20one%20of%20these%20Orange%20Creamsicle%20Cookie,%20because%20I%20plan%20to%20be%20Paula%20in%20my%20next%20life%20-%20with%20her%20money%20but%20without%20diabetes.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20flour,%20baking%20soda,%20and%20salt;%20set%20aside.%20%20In%20a%20large%20bowl,%20cream%20butter%20and%20sugars%20until%20light%20and%20creamy.%20Beat%20in%20egg%20and%20vanilla%20until%20smooth.%20Gradually%20add%20flour%20mixture%20and%20stir%20until%20just%20combined.%20Stir%20in%20orange%20zest%20and%20chips.%20%20Drop%20by%20rounded%20teaspoonfuls%20onto%20ungreased%20cookie%20sheets.%20Do%20not%20flatten%20cookies;%20they%20will%20bake%20%22down%22%20on%20their%20own.%20Bake%208%20to%2010%20minutes%20or%20until%20golden%20brown%20around%20the%20edges.%20Cool%20for%20several%20minutes%20on%20cookie%20sheets%20before%20transferring%20to%20rack%20to%20cool%20completely.%20Store%20in%20airtight%20container.%20%20Makes%20about%2036,%203-inch%20in%20diameter%20cookies.%3C/p%3E%3Cp%3EPictures%20taken%20with%20my%20phone%20-%20small%20and%20blurry%20but%20you%20get%20the%20idea.%20%20This%20cookie%20recipe%20is%20very%20adaptable,%20you%20could%20substitute%20semi-sweet%20chocolat
