Ingredients

  •     TOPPING
  • 1/2 ounce Grape-Nuts
  • 2 Tbsp. Granulated Sugar
  • 1 Tbsp. Fresh Rosemary Leaves
  • 2 tsp Unsalted Butter
  •     CAKE
  • 1/4 c. Granulated Sugar
  • 1/4 c. Unsweetened Applesauce
  • 2 x Egg Whites
  • 2 Tbsp. Extra virgin olive oil
  • 2 tsp Extra virgin olive oil
  • 1 Tbsp. Orange Juice, From Frzn Concentrate Thawed
  • 1 c. Flour Sifted
  • 1 tsp Baking Pwdr
  • 1/8 tsp Cinnamon
  • 1 pch Salt
  • 1 1/2 c. Mandarin Oranges liquid removed segments

Directions

  1. Preheat oven to 350 , spray 8" round baking pan with nonstick cooking=
  2. spray.
  3. To prepare topping, in small bowl, combine cereal, sugar, rosemary and butter, blend with fingertips till mix forms coarse crumbs. Set aside.
  4. To prepare cake, in large bowl, whisk together sugar, applesauce, eggwhites, oil, 1 Tablespoons water and the juice concentrate till well blended.
  5. Holding sifter over bowl, sift the flour, baking pwdr, cinnamon & saltonto mix, fold lightly till just blended. Gently stir in orange segments.
  6. Spread batter proportionately into prepared pan; sprinkle proportionately with topping bake till lightly browned & toothpick inserted in center comes out clean,=
  7. 30-35 min.
