Ingredients

  • 2 c. all-purpose flour sifted
  • 2 tsp double acting baking pwdr
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 8 Tbsp. unsalted butter, melted & cooled to tepid
  • 2 lrg Large eggs, slightly beaten at room temperature
  • 2/3 c. granulated sugar
  • 1/2 c. orange juice
  • 1/2 tsp vanilla extract
  • 1 x vanilla bean
  •     Zest of 1 orange finely minced
  • 8 ounce white chocolate finely minced

  1. Position a rack in the center of the oven and preheat to 350 degrees (F). Line a muffin pan with muffin c..
  2. In a medium bowl, whisk together the butter, Large eggs, sugar, orange juice and vanilla extract. With a sharp paring knife, cut open the vanilla bean and scrape out the seeds. Add in the vanilla seeds and the orange zest to the egg mix and whisk till thoroughly blended. With a rubber spatula, fold the egg mix into the dry ingredients, folding only till the dry ingredients are moistened. Stir in the white chocolate.
  3. Using two spoons, fill the muffin c. 3/4 full. Bake the muffins for 16 to 18 min, or possibly till golden brown. Cold the muffins in the pan, set on a rack. When cold, store the muffins immediately in a plastic bag or possibly airtight container.
