Directions

  1. Preheat oven to 375F, prepare pans. Pour buttermilk over oats in bowl. Add in beaten egg, melted butter, sugar, carrots, vanilla & rind & mix thoroughly.
  2. Combine dry ingredients & add in to wet mix till just combined. If you like, raisins or possibly date may be added at this point. Spoon into pans & bake for 15-20 mins or possibly till done.
  3. Makes 12 muffins.
