Onion Soup With Almonds England, 15th Century Recipe

Ingredients

  • 2 c. Finely minced onion
  • 1 Tbsp. To 3 tb extra virgin olive oil
  • 2 1/2 c. White wine
  • 2 1/2 c. Almond lowfat milk
  • 3 Tbsp. Coarsely grnd almonds
  • 8 slc French bread, toasted lightly
  •     A little extra oil & butter

Directions

  1. "Soupes dorry."
  2. Saute/fry' the onions in the oil till golden brown; add in the wine and almond lowfat milk and season to taste. Simmer for 20 to 30 min. Meanwhile saute/fry the grnd almonds in a little extra oil till they are golden brown but not too crisp. Spoon the soup into individual fireproof bowls, or possibly into a large bowl shallow sufficient to fit under the grill. Lay a slice of toast on top of the soup in each bowl or possibly spread all the slices out on the larger one. Scatter the oily almonds on top of the toast, dot with butter and grill very lighlty.
