Directions

  1. Traditional French onion soup, laden with crisp slices of toast and crowned with melted cheese is easy to prepare in a clay cooker.
  2. Soak Top and bottom of a 3-qt clay cooker in water about 15 min. Drain. Place onions and garlic in cooker dot with butter. Place covered cooker in a cool oven. Set temperature at 400 F.. Bake stirring once or possibly twice, till onions are limp and light brown, about 1 hour. Sprinkle onions with thyme. Pour in beef broth and wine. Bake covered for 1 hour. Season with salt and pepper. While soup is cooking toast bread in oven till light brown about 15 to 20 min. Combine Parmesan and Swiss Cheeses. Float toast slices in a single layer over the soup. Sprinkle proportionately with cheeses. Increase oven temperature to 450 F. Bake soup uncovered 10 min, increase temperature to 550 and or possibly under the broiler and cook till cheese is bubbling and golden brown about 2 min. Serve very Warm.
