Ingredients

  • 13 oz thinly sliced onions
  • 6 1/2 oz all purpose flour
  • 1 cup flour h&r
  • 10 Tbsp flour h&r
  • 2 quarts water
  • 2 cups water
  • 2 tsp salt
  • 3/4 tsp black pepper

Directions

  1. Lightly brown onions in fat - remove onions and add flour and blend.
  2. Add water or stock gradually to flour mixture - stir constantly with wire whip.
  3. Add salt, pepper and brown onions.
  4. Cook until smoot and thickened - internal tempurature must reach 165 F for 15 seconds.
  5. Hold at 140 F until service.
