Ingredients

  • 4 eggs, whisked
  • 3 potatoes, peeled, skinned and quartered lengthwise
  • 3 strips of thick cut bacon
  • 2 green onions, chopped (both green and white parts)
  • 1/2 small yellow onion, chopped
  • 1-2 green bell peppers, chopped
  • Salt to taste
  • black pepper, to taste
  • 1-2 cups chopped cooked ham
  • 1/4 cup chopped fresh parsley
  • Olive oil, as needed
