  • 4 large egg whites
  • 3 ½ cups all-purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 2 cups sugar
  • 16 tbsp / 1 cup / 2 sticks unsalted butter, at room temperature
  • 1 ½ cups very cold water
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • Gel Food colouring (I used
