Ingredients

  • 2 can (6 1/8-ounce) solid white tuna, liquid removed well
  • 1/3 c. Mayonnaise
  • 2/3 c. Finely minced fennel bulb, (sometimes called anise)
  • 5 x Kalamata or possibly other brine-cured black olives pitted and minced
  • 1 Tbsp. Chopped fresh parsley leaves
  • 1 Tbsp. Fresh lemon juice, or possibly to taste
  • 4 slc Rye bread, toasted lightly
  • 4 ounce Grated sharp Cheddar cheese

Directions

  1. Preheat broiler.
  2. Into a bowl flake tuna and stir in mayonnaise, fennel, olives, parsley, lemon juice, and salt and pepper to taste. Divide tuna salad among toast slices and top with Cheddar. In a shallow baking pan broil sadwiches under broiler about 4 inches from heat till cheese is bubbling, 1 to 2 min.
