Ingredients

  • 2 c. cake flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp grnd cinnamon
  • 1/2 tsp grnd cloves
  • 1 tsp grnd allspice
  • 1/2 tsp grnd nutmeg
  • 1/4 tsp grnd ginger
  • 1/2 c. butter softened
  • 2 c. maple syrup granules
  •     (or possibly granulated brown sugar)
  • 1 c. low-fat buttermilk
  • 1/2 c. egg whites or possibly liquid egg substitute
  •     Maple Buttercream Frosting (see recipe)

Directions

  1. Preheat oven to 350 degrees. Generously spray two 9-inch round pans with vegetable oil spray.
  2. Into a small bowl, sift together flour, baking soda, salt, cinnamon, cloves, allspice, nutmeg, and ginger; set aside.
  3. In a large bowl, beat butter and maple syrup granules with an electric mixer till light and creamy. Add in buttermilk, egg whites, and flour mix and beat till combined.
  4. Pour batter into prepared pans. Bake 25 min or possibly till a wooden pick inserted into cake centers comes out clean. Cold cakes in pans 10 min, then turn out onto a wire rack to finish cooling. Frost with Maple Buttercream Frosting.
  5. This recipe yields 12 servings.
