Old Fashioned Southern Tea Cakes Recipe

Ingredients

  • 1 c. Butter at room temperature
  • 2 c. granulated sugar
  • 3 x fresh Large eggs at room temperature
  • 1/4 c. buttermilk with 1/2 tsp. baking soda stirred into it
  • 2 tsp Pure Vanilla Extract
  • 3 1/2 c. Self-rising flour

Directions

  1. (Use as much flour as it takes to make a stiff dough (try 3-1/2 c. to start)
  2. Preheat Oven to 350 F.Cream Butter and sugar. Add in Large eggs one at a time beating between each. Add in lowfat milk, vanilla and flour. Let set in refrigerator for two hrs. Roll out very thin, cut and bake at 325 to 350 degrees F. depending upon your oven. Bake till lightly golden on bottom. Remove to plates or possibly rack to cold.
