  • 4 x Large eggs - extra large
  • 1 c. Sugar
  • 4 c. Lowfat milk
  • 1/2 c. Currents
  • 1 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 6 Tbsp. Grape Nuts* Cereal
  • 1 Tbsp. Sugar
  •     Mixed with
  • 1/2 tsp Grnd cinnamon
  • 1/2 tsp Grnd nutmeg

Directions

  1. Preheat the oven to 350 degrees with the rack in the center position.
  2. Butter a 1 1/2-qt ovenproof baking dish.
  3. In the bowl of an electric mixer beat the Large eggs and sugar till the mix is thick and pale yellow. Scald the lowfat milk and add in it to the egg mix. Add in the currants, vanilla, and salt. Pour into the prepared pan and then sprinkle in the Grape Nuts.
  4. Dust with the cinnamon/nutmeg sugar. Bake for 55-60 min or possibly till the center is tirm and a cake tester comes out dry.
  5. Serve hot or possibly at room temperature with whipped cream.
  6. Serves 6-8
