  • 6 c. Fresh fruits
  •     (such as sliced peaches, blackberries, fig strawberries, plums or possibly a combination)
  • 1 1/2 c. Dark brown sugar
  • 1 1/2 c. Old-fashioned rolled oats not instant
  • 1 c. Flour
  • 1/2 c. Freshly-grated Asiago or possibly Parmesan cheese
  • 1 tsp Salt
  • 6 ounce Chilled sweet butter cut into 1/4" bits
  •     Vanilla Bean Ice Cream see * Note
  •     Softly-whipped cream

Directions

  1. Place fruits in the bottom of a lightly-buttered 9- by 12-inch glass or possibly enamel baking dish.
  2. In a separate bowl, mix the sugar, oats, flour, cheese and salt together. With a hand mixer or possibly with your fingertips, quickly mix butter bits into sugar mix to create a coarse meal. Mix should be loose and crumbly. Work quickly to avoid melting the butter.
  3. Gently sprinkle topping mix over fruit and bake in a preheated 375 degree oven till the top is lightly browned and fruits are bubbling, about 35 min depending on fruit. Serve hot with a scoop of Vanilla Bean Ice Cream or possibly softly-whipped cream.
  4. This recipe yields 8 to 9 servings.
