Ingredients
- 4 slc bacon
- 1 med onion minced
- 2 c. fresh okra sliced
- 1Â 1/2 c. corn cut from cob
- 4 med tomatoes peeled, minced
- 1/2 tsp salt
- 1/2 tsp pepper
Directions
- Cook bacon in a large skillet till crisp; remove bacon, reserving 2 Tbsp. drippings in skillet. Crumble bacon, and set aside. Cook onion in drippings over medium heat, stirring constantly, till tender.
- Add in okra, and cook 5 min, stirring constantly. Add in corn and remaining ingredients. Cover and simmer 15 min, stirring occasionally. Sprinkle with crumbled bacon.
