  1. Cream sugar and shortening. Add in Large eggs to creamed mix.
  2. Add in dry ingredients to shortening mix, then add in oatmeal. Beat well.
  3. Bake at 350 degrees for 35 min in a 7 or possibly 8 x 14 inch pan.
  4. BOILED ICING FOR OATMEAL CAKE:3/4 Stick butter 1 Tbsp. evaporated lowfat milk 1 3/4 C. brown sugar 1 C. coconut 1 C. minced nuts
  5. Boil butter, lowfat milk and sugar for 1 minute. Add in coconut and nuts.
  6. Pour over cake and brown lightly in oven.
